BBQ Chicken Bake

Simple and Tasty 
Complexity Level:  Easy
BBQ Chicken Bake
What You Need:
4 Large Chicken Breasts, skin and bone in tact
½ cup Hickory Smoked BBQ Sauce
1 tbsp Cooking Oil
3 tbsp Water
1 tsp Garlic Powder
½ tsp Liquid Smoke
1 tbsp Butter
½ tsp Crushed Red Pepper Flakes
1 tsp Black Pepper
1 Onion, sliced


First, whisk the BBQ sauce, liquid smoke, water, oil, garlic powder, black pepper, and red pepper together.  Place chicken into a bol or zippy bag, and coat with BBQ mixture.  Marinate chicken breasts overnight for best flavor, or at least 2 hours to flavor.

After marinating, slice the onion and place in the bottom of a 9x13 baking pan. Dice 1 tbsp of butter and place in varied places on top of onion slices.  Heat 1 tbsp Olive Oil in a large skillet.  Crisp the chicken by searing each side for about 4 minutes, and place over sliced onion and butter in baking pan. Do not throw out the marinade in your bowl/zippy bag!

After placing all chicken breasts into your baking pan, add 1 tbsp BBQ sauce and an additional tbsp of water to the marinade bowl/ bag. Mix or shake the marinade mixture, and pour this sauce mixture over the chicken. 

Next, cover your baking pan tightly with aluminum foil. Bake at 350ºF for 25-30 minutes, of until chicken is well done.  Your pan will have so much yum under the chicken.  Plate the chicken then use the drippings, onions, and sauce to coat the breats.

Serve alongside corn and baked beans for a great southern meal, or bake up some Cornbread for a special treat!
