Quinoa Fruit and Nut Salad

Quinoa, Fruit, and Nut Salad
What You Need:
2 cups Cooked Quinoa
2 tbsp Prunes (about 6-8), chopped
2 tbsp Dates, chopped
1/4 cup Dried Cranberries
2 Apples, diced
1 tbsp Agave Nectar (like honey but better for your heart and health)
1 tbsp Lemon Juice
2 tbsp Pine Nuts
1/4 cup Sliced Almonds
1/4 cup Chopped Walnuts
1/4 cup Pecans
1/4 cup Apple Cider
2 shallots, minced
Fresh Ginger Root, about 1/4 tsp grated
Pinch Nutmeg (about 1/8 of seed if using a fresh nutmeg seed)
Fresh Thyme
Fresh Sage
Sea Salt

Cook Quinoa with vegetable stock as liquid (1 cup quinoa, 2 cups stock). Let cool--do not over cook! While quinoa is chilling, place nuts into a skillet and heat over medium. This will lightly toast them, bringing out natural oils (no oil is needed in this recipe).

Remove nuts from heat, and lightly crush them to release flavors. Place into a large mixing bowl. In a small bowl, add diced apples, agave, and lemon juice. Toss to coat apples. Chop the fresh sage and thyme (you will want about 2 tbsp of each fresh herb once chopped).

Add chopped dried fruits, black pepper, allspice, and nutmeg to nuts. Toss to coat evenly.  Remove Quinoa from fridge. Add apples, ginger, Salt, shallots and Apple Cider. Mix throughly. Fold in nuts and fruit mixture, and let chill at least 1 hour.

This is great served as is, or over a bed of fresh spinach with a drizzle of balsamic reduction!
