Subsitute your Favorite proteins and make this a feast!
Curried PorkWhat You Need
1.5 lbs Boneless Pork
2 cloves Garlic, Minced
1 tbsp Butter + 1 tbsp Oil
1 can Coconut Milk
1 1/2 cups Water
2 Large Carrots, sliced to about 1/2 inch thick
2 Potatoes, Diced
1 Onion, finely chopped
Pinch Ground Nutmeg
2 tbsp Yellow Curry Powder
1 tsp Salt
1 tsp Black Pepper
1/2 tsp Cinnamon
1 tbsp Parsley
2 tsp Turmeric
Juice of 1/2 Lime
1 tbsp Minced Cilantro + 1/2 bunch Whole Cilantro
Chop the Pork into 1 1/2 medallions and sprinkle with salt and black pepper. Place the minced garlic, butter, and oil in a large pot. When the garlic begins to sizzle, add the pork chops and lime juice. Cook untilhe prok has a nive golden sear on each side.
As the pork chops are browning, whisk all the spices with a can of coconut milk in a medium bowl and set aside.
Chop the carrots and potatoes and add them to the skillet with the pork and lime juice. Pour the coconut milk mixture over the pork, and add 1 1/2 cups water. Add the 1/2 bunch of Whole Cilantro (to be removed prior to serving)Bring all of this to a simmer over medium heat, cover, and let simmer for 15 minutes. Lower to low heat, stir, and let this cook for at least an hour. The sauce will reduce, the potatoes and carrots (and onions) will cook, and this willsoak the prok with flavor.
Serve over a bed of rice or couscous. Excellent if you use seafood or vegetarian substitues in place of the pork.

Ironically you are preaching to a Vegetarian/ Vegan who does not support factory farming. No where in my blog have I encouraged such abuse. I thank you for your feedback, but do not welcome the rants.
