Wonderful side dish for any occasion!

Balsamic Roasted Beets
What You Need:1 bunch Beets (I prefer Golden Beets)
1 tbsp Olive Oil
1/2 tsp Corriander
Sea Salt
1/4 cup Balsamic Vinegar
DIce your beets and toss with Olive Oil, corriander, sea salt, and 2 tbsp Balsamic. PLace onto a baking sheet and bake at 350 degrees for 45 minutes. Remove from oven and drain oil. Place the beets back onto the baking sheet and drizzle with more vinegar. Heat the oven to 450, and roast the beets for 10 more minutes. Remove from heat and let chill.
Add some Fresh Thyme for a more robust treat that will accompany any meal!
