Vegetarian Summer Pasta

Heart Healthy and a great way to start off summer!
Complexity Level:  Easy
Vegetarian Summer Pasta
What You Need:
1 16oz. Jar Chunky Tomato Basil Pasta Sauce
1 cup Boca Grounds (soy protein grounds)
1 Green Bell Pepper, diced
10 oz. Mushrooms, hlaved and sliced
1 cup Raw Spinach, roughly chopped
3/4 can Black Olives, sliced
1 clove Garlic
1 lb. Cooked Pasta
1 tsp Olive Oil
Asiago Cheese

In a large skillet, heat the olive oil, pepper, garlic, mushrooms, and boca grounds for 5-7 minutes, or until th the garlic begins to lightly toast.   Next, add the sauce, olives, and spinach and cook over edium heat for 6-8 inutes, or until the sauce beings to bubble.  Remove from heat and serve over your favorite cooked pasta.  Top with Asiago Cheese for a great accent of flavor!
