Tofu Breakfast Scramble

This is so much better than any frozen deal!
Tofu Breakfast Scramble
What You Need:
3 Eggs, beaten w/ 2 tbsp Soy Milk
1 tsp Olive Oil
1 Package Extra Firm Tofu, diced
1 Red Bell Pepper, julienned
1/2 Red Onion, julienned
2 cups Fresh Spinach, rinsed
6-8 Fresh Button Mushrooms, sliced thinly
2 cloves Garlic, minced
Water
1/4 cup Sliced Black Olives
Salt
Pepper
*if your like spice, add yourfavorite chilies!

This is very simple!  First start by heating the oil with the garlic, onions, and bell pepper.  Cook for 2-3 minutes then add the diced tofu, salt, and pepper.  Heat over medium heat for 4-5 minutes, stiring to avoid any garlic burn.  Add the spinach and remaining veggies with 1 tbsp water and cover.  Cook covered for 5 minutes.  Remove cover and whisk in the eggs.  Cook until the eggs are down anad serve with your favorite breakfast side.  This is also wonderful with cheese and  potaotes added in!
