This was an idea I had that turned out amazing! Heathy can be Tasty!
1 can Black Beans, drained and rinsed
1/4 cup chopped Red Onion
2 cloves minced Garlic
1/2 cup Chopped Spinach
1/2 Red Bell Pepper, finely chopped
1/4 cup Corn Meal
1 tsp Salt
1 tsp Red Wine Vinegar
1/2 tsp Black Pepper
*I used Maytag Blue Cheese, which is very potent, however also expensive. If using a strong blue cheese such as this, you only need about 1/4 cup chopped. A milder blue cheese such as Store Brand or Gorganzola, you may need 1/2 cup. If you prefer Roquefort, about 1/3 cup is needed. You can of course use more or less than the suggestions, if you want a milder or boder flavor accordingly.
Optional: Arugula, balasamic dressing, and tomatoes.
Forming the patties:
Pour the rinsed black beans into a large bowl and smash. I use either the blunt end of a rolling oin, or a clean can of veggies. Once smashed, add the salt, pepper, vinegar, eggs, spinach, corn meal, pepper, onion, and garlic. Mix well. Fold in the blue cheese and let the mixure sit 10 minutes. Form into 3-4 patties.
Heat 1 tbso oil with 1 tbsp butter. Place the patties into the hot skillet, and cover. Cook 15 minutes over medium low heat. If your heat is too high you will burn the patties. After 15 minutes, flip and cover. Cook 10 more minutes, then remove from pan to serve.
To top, I tossed fresh Arugula in Blasamic Dressing and topped the burger with sliced tomatoes and the arugula mix. Excellent on a toasted bun!
