Vegetarian Orzo Bolognese

WOW!  So tasty, and simple!  A Hearty Dish of Yum!!
Vegetarian Orzo Bolognese
What You Need:
Pasta
2 cups Orzo Pasta (can use gluten free)
Water
Salt
Sauce
20 oz. Tomato Sauce
3/4  cup Grated Parmesan Cheese (can use Vegan)
1 tbsp Parsley Flakes
3 cloves Garlic, minced
1 Shallot, minced
3 tbsp Olive Oil
2 Bay Leaves, whole
1 tsp Basil
1/2 tsp Oregano
1 1/2 cups Boca Grounds (soy ground meatless protein)
1 Bell Pepper, diced
2 Roma Tomatoes, diced

This is another simple recipe that tastes AWESOME!  Start by placing two pots on the stove.  Once filled halfway with water and with 1 tsp Salt.  Start to voil that water.  The other, place the olive oil, minced garlic, minced shallots, and soy grounds and sautee.  Add the salt, pepper, and spices, and stir for 1 minute.  Add the sauce and lower the heat to medium low, covering te sauce pot and allowing the sauce to simmer.

That water is starting to boil!  Add the orzo and leave on high to boil.  Orzo takes a bit to cook, but like all pasta be cautious to avoid over cooking.  It is ok to take some out and try a piece to check for doneness.  When the orzo is cooked, drain, and pour into the sauce mixture.  Stir until coasted, then add the parmesan cheese and diced Tomatoes and Bell Peppers.  Serve!  This is excellent with added mozzarella (can use Vegan) on top!
