Cheddar Artichoke Bread

This is great for sandwhiches.... and awesome with Grilled Cheese!
Cheddar Artichoke Bread
What You Need:
1 pint Warm Water
1 tbsp dry Active Yeast
1 1/2 tsp Salt
1 tbsp Sugar
4 cups Flour*
3 tbsp Olive Oil
1 tsp Baking Soda
1 cup Quartered Artichoke Hearrts, drained
1/2 tsp Garlic Powder
1 cup Cheddar Cheese
1/2 tsp Ground Thyme
1/2 tsp Black Pepper
**Adding Olives encouraged

This is much easier that you think. No I do not own a bread machine. It isn't neccesaary! To start I turn my faucet to hot water and wait until it is hot to touch, then I fill 1 pint glass half way. I then stir in the yeast and sugar, and cover the glass with a wet towel. Let this sit 10 minutes. Meanwhile you can sift 2 cups of flour with the baking soda, salt, garlic powder, thyme (and/ or any spices you desire) into a large bowl. Add the salt and olive oil. Do not stir. Pour the yeast water into the flour and gently mix. You can now add flour until the dough is sticky. Knead no more than 1 minute, then set this dough ball into a greased bowl. To proof (rise the dough), there are 2 options.

1.) If you live where today (bread day) it is hot outside aka 70 degrees Fahrenheicovet or above, cover the bowl with a wet towel and set on your porch.

2.) If it is cold, snowing, raining, miserable out, heat the over to about 100 degrees. Turn off. Place the bowl in the oven and cover the bowl with a wet towel.

Both methods work. I have tested them numeros times! After 45 minutes to an hour, you will knead the dough 10 times (just 10 times) then you can divide it in half and place each halve into a greased loaf pan. Cover with a wet towl and proof again for 1 hour.  This is the point where you add the artichoke hearts and cheese. (or olives and veggies... never fear adding yum!)

After proofing, bake at 350 degrees fahrenheit until golden brown. Let cool and remove from pan. Slice and serve!

  7. Now this is something have to try. A hybrid of quick bread and yeast bread" I own neither a bread machine or stand mixer and love the minimal kneading.
