Vegetarian (or Vegan) Stuffed Green Peppers

Protein. Flavor. Happiness.  YUM!
Vegetarian (or Vegan) Stuffed Green Peppers
What You Need:
1 Bag Boca Crumbles
4 Bell Peppers + 1 to dice
2 Roma Tomatoes
1 Yellow Onion, diced
1 Zuchini, diced
1 cup Cooked Rice
16 oz. Tomato Sauce
1/2 tsp Hot Sauce
2 cloves Garlic, minced (or 3/4 tsp Garlic Powder)
1 Pinch Dried Oregano
1 cup Shredded Carrots
1 tsp Salt
1/2 tsp Black Pepper
Oil

In a large sauce pan, heat the garlic cloves (unless using powder--do not add powder to oil), onions, diced green pepper (not the 4 that will be stuffed), and boco grounds. Sautee.

Next, preheat the oven to 350 degrees.  Add the 12 oz. tomatoe sauce, hot sauce, zuchini, carrots, seasoning, and let simmer up to 30 minutes.  Turn off heat, and stir in cooked rice and tomatoes.  If making non-vegan, add 1 1/2 cups shredded cheddr cheese.  Stuff the 4 cleaned and hollowed shells and pour 12 additional ounces of tomato sauce over.  Bake at 350 or 1 hour.

These are very healthy and yummy!
