Ultimate Grilled Cheese

So so so good.  There are no other words.  Yum!
Ultimate Grilled Cheese
What You Need
2 1 inch slices of your Favorite Artesan Bread*
3 Slices Muenster Cheese
2 Slices Provologne Cheese
2 Slices Cheddar Cheese
2 Slices Mozzarella Cheese
1 tbsp Ricotta Cheese
Onions
Green Peppers
Butter
Mayo (trust Me)
Fresh Basil Leaves
*I used Kalamata Olive, Thyme, and Asiago Bread.....
But totally awesome with Cheddar Artichoke or Antipasti Bread!

No one thinks of Grilled Cheese as a flavor rush.  Be honest.  Aside from those crafty Grilled Cheese Restaurants in NYC, we whip these up when time and money are pressed, or when the kids want food and cooking doesn't sound like something we want to get too deep into.  But Grilled Cheese is awesome, so lets get crazy!  You can use any cheeses and breads!

To start, slice your bread into 3/4 - 1 inch thick slices. For this recipe, I sauteeded Mushrooms, Green peppers, and onions for a few minutes, to start to sweat out some flavor.  Then I layere the slices of cheese onto the bread (half on each slice) and stuffed the sauteed veggies into the sanwich.  The trick to assure your sandwich wont burn is to mix butter and mayonaise and use this to spread onto the bread.  Heat until golden brown, then serve!  It's no brain surgery, but this is one tasty sandwich!

Other Idea's I've Used:
*Ham, Smoked Gouda, Cheddar, Chipolte Mayonaise, Lettuce, Cilntro, and Everything Bread
*Brie, Romano Rosaro, Currant Mustard, Asiago, Rosmary, Carmalized Onions, Cranberry Walnut Bread
*Fresh Mozzarella, Fresh Tomatoes, Fresh Basil, Balsamic Glaze, Bacon, BabyG reens, Salt/Pepper Bread
*Sprouts, Toasted Provologne, Avocado Mayo, Fresh Tomatoes, Spinach Artichoke Asiago Bread.

I've made hundreds of combintaions, but those are my favorites!
