Teriyaki Tofu Yum-wich What You Need:
1/4 inch thick slice of Tofu (Extra Firm)
Sliced Bell Pepper
Sliced Red Onion
Sliced Mushrooms
1/2 Avocado, sliced
Mayo
Tomato
Lettuce
Cheddar Cheese (vegan cheese is also accepted!)
Lime Juice
Black Pepper
3-4 strands fresh Cilantro
1/4 cup Teriyaki Sauce
1 tbsp Chilli Oil
Start by marinating the tofu in the teriyaki sauce at least an hour (I keep a whole block sliced thin in the fridge marinating over night and use it as I need it).

When you are ready to cook: Sautee the mushrooms, peppers, onions, and tofu in a skillet (I like to sprinkle with a pinch of black pepper and garlic powder). Do not turn tofu until golden brown. The whole cooking time is roughly 7 - 8 minutes. When the tofu is just about done, separate the veggies and tofu in the pan, and top the veggies with the cheese so it melts over them ( the cheese is the "glue"). Mayo on both sides of the bread, lettuce on one side and the avocados/tomatoes the other. Salt and pepper the Tofu, give it a squirt of lime juice and place it on the sandwich. Top with the veggies and cilantro and enjoy!
