Low-Sugar Dreamsicle Cheesecake

Cooking with light sugar is a good thing.  This cheesecake is a great thing!
Low-Sugar Dreamsicle Cheesecake
What You Need:
Crust:
1 1/2 cups Graham Cracker Crumbs
4-5 tbsp Melted Butter
Filling:
3 8oz. Blocks Cream Cheese (Can use reduced fat)
3 Eggs
2 tbsp Flour
1 cup Baking Sugar Substitute
1 tbsp Vanilla Extract
1 tsp Orange Extract
2 tbsp Cream/ Whole Milk/ Half N' Half
1 tsp Fresh Orange Zest (if available -- can be left out of recipe)
Glaze
1/2 cup Orange Marmalade
1 tsp Vanilla
2 tbsp Powdered Sugar
Orange Zest

To start:
Preheat oven to 350 degrees fahrenheit.  Meanwhile, melt the butter and mix with the graham cracker crumbs.  Lightly spray a spring form cheese cake pan with nonstick coking spray, and press the butter cracker crust into the bottom of the pan.  Once the oven is preheated, bake 8-10 minutes, or until the crust begins to lightly brown.  Remove from oven, and let the crust cool.  Lower the oven to 325 degrees fahrenheit.

The filling is simple, but it is important that before starting the recipe, you let the cream cheese and eggs sit to rom temperature (sit them out at least 2 hours prior to cooking).   To start the filling, whisk the room temperature cream cheese with the vanilla and orange extracts.  Next, Whisk in the Sugar Substitute, Flour, and Milk.  One at a time mix in the eggs.  Next, pour the filling into the cooled crust pan.  Place in oven, and Bake for 50-60 minutes.  It is imperative that you DO Not Open The Oven EVER!  This will crack the cheesecake (see picture), which is sad.  Use the window and light to check the cake.  After the 50-60 minutes, remove from oven, run a knife around the edges and let cool 1-2 hours at room temperature.  

For the glaze, simmerthe marmalade, sugar, and vanilla for 45 minutes on low.  This will carmalize and reduce to make a rich glaze.  Pour atop the cheese cake, then chill at least 8 hours, best if overnight.  I sprinkled orange zest over the cake to make it have extra zing!


This is wonderful with chocolate whipped cream!
