It's ok to Grill Your Veggies... and Eat em' Too!
Grilled Summer SquashWhat You Need:
2-3 Summer (Yellow) Squash, Raw, Sliced 1/4 inch thick*
1 tbsp Olive Oil
1 tsp Garlic Salt
1/2 tsp Onion Powder
1/2 tsp Black Pepper
1/2 tsp Smoked Paprika
1 Pinch Cumin
*you can cut rounds or length ways
Another Simple recipe that is Amazing, Healthy, and Tasty! Whisk the oil and pieces and coat the squash in the mixture. You can let sit up to 1 day to marinate. Heat the grill to medium and grill each side 8-10 minutes. You can make those beautiful grill marks by rotating each side on a 90 degree angle after 5 minutes, then et sit 5 more. Serve hot with a fresh drizzle of olive oil and freshly minced basil! Wow this is healthy, delicious, and oh yeah... pretty simple too!
These are excellent with grilled onions, hummus, tomatoes, lettuce, and sprouts to make one killer sandwich!
Enjoy!

I prefer to put mine directly onto a grill instead of sealing them in foil. I use olive oil instead of butter. Excellent recipe, very good!
ReplyDeleteNice flavor to compliment the tangy BBQ. Pair with Grilled Orange Chicken for a great meal.
ReplyDeleteI am so glad you enjoyed it! I love throwing all kinds of veggies directly onto the grills -- way better flavor than the foil method, although foil works well for potatoes and butter on the grill... Yum! Thanks for sharing your comments ;) You guys Rock!
ReplyDeleteI have been making this for years. I use an indoor grill and sometimes, like another member mentioned, I will add balsamic!
