Warmed Nutty Greens

Another simple recipe thats both tasty and great for your health!

Warm Greens and Walnuts/ Pistachios
1 Endive, chopped
2 cups Arugula, chopped
1 cup Radicchio, chopped
2 tbsp Olive Oil 
2 shallots (minced) -- or 1 large Shallot
1/2 tsp Salt (I cook with Lo-Salt: Cheap and 66% less sodium 
1/2 tsp Black Pepper
1 tbsp Honey or Agave Nectar
1 clove Garlic
2 tbsp Chopped Walnuts or Pistachios
Optional: 2 slices bacon, cooked, crumbled (use vegan bac-uns or baco-bits...soy and yummy)
Optional:  Crumbled Feta or Blue Cheese makes this even more amazing!

In a medium skillet, heat 1 tbsp olive oil, minced garlic, and shallots. Toss in the Endive, Arugula, and the Radicchio, and heat until the greens begin to slightly wilt. Meanwhile, whisk together the remaining 1 tbsp Olive Oil, the Honey, Salt, and Pepper in a small bowl. Remove the greens from the heat, plate, and drizzle the honey mixture over them. Top with the chopped nuts, adding the crumbled bacon or the soy bac-un bits -- Also amazing with feta crumbled on top! Add your favorite diced chicken to make it a meal, or serve with slices of fresh grapefruit for an added bonus! Great on a chilly, heart healthy day!

This goes wonderfully with a chilled glass of Pinot Noir and a big comfy chair!
