Spicy Bean Salad

Seriously Simple and Wonderful as a Side!
Makes 6 servings
Complexity Level: Easy
Total Time: 10 minutes
Spicy Bean Salad
What You Need:
1 can Black Beans
1 can Cannellini Beans
1/4 cup Minced Cilantro
2 Limes
1/2 tsp Salt
2 Serrano Chilies
2 tbsp chopped Red Onion
2 Roma Tomatoes
1 tsp Garlic Powder
1 Large Carrot, grated

Heat a medium skillet with 1 tsp water (oil if you want but I did not add any for low fat option).  Split the serranos, clean out the seeds, and mince.  Add the minced chilies and red onion to the skillet to "sweat out" the spice of the chillies.

Meanwhile, rinse the canned beans and toss with all the remaining ingredients, using the juice of the two limes to dissolve the salt and garlic powder.

Toss together and add to skillet.  Stir for 1 minute then remove from heat and serve or chill.  Excellent side dish and wonderful over a bed of romaine!
