Simple Peanut Vanilla Muffin Cakes

5 Minutes, $3, and 24 awesome muffins later...
I rarely if ever buy a box of cake mix.  It's not that I don't love the simple alternative, I just love even more the hard work of baking.  But, I know plenty of people that love to cook and shortcuts are welcome, and so I am posting some simple ideas!  I made these tonight because I was in a sweet mood, and to be quite frank -- They Rocked!

Simple Peanut Vanilla Muffin Cakes
What You Need:
1 Box White Cake Mix
1 Cup Water
2 Eggs
8oz Cream Cheese (room Temp)
1/2 cup Crunchy Peanut Butter

No you will not follow the box recipe, so discard it immediately!  Pre-heat the oven to 350 degrees Fahrenheit.  Mix the water, cake mix, and eggs in a large mixing bowl.  I like to soften the peanut butter by microwaving it for 30 seconds.  Once softened, fold the cream cheese and peanut butter together, then mix into the vanilla batter.  Its pretty much this simple!  Bake for 15-18 minutes or until light brown and Viola!  These are super tasty and quick to make!
