Quinoa Burgers

Vegetarian, Delicious, Simple, and Fun!

Complexity Level:  Easy

Quinoa Corn Cakes N Burgers
What You Need:
1 cup Quinoa cooked in 2 cups water, chilled
1 can Corn (Save the juice in the can) or 3 Fresh Ears
The "juice" from the can of corn
1 tbsp Hot Sauce
1 tsp Salt
1/2 tsp Black Pepper
3/4 cup Flour (can use Gluten Free)
3 Eggs
1 tbsp Parsley Flakes
1 cup Shredded Cheese of Choice
Cooking Oil

Mix all ingredients in a large mixing bowl. The consistency will be thick but sticky. If runny please add more flour. If too thick add a splash of water or cream (your choice). In a medium skillet, pour enough oil to be about 1/2 inch deep. Heat on medium heat until a dusting of flour makes a sizzle.  


Spoon about 1/2 cup of the batter into the hot oil, cook about 2 minutes, turn, 2 more, remove from heat. If the oil is too hot, you will need to flip sooner, too cold longer. The goal is to h
ave a light fluffy "cake" or patty (see pictures for ideal brown color).

Serve as a burger, as a snack, or cut into strips, splash hot sauce on 'em and enjoy! This is SOOOOO tasty ;) I could hardly take pictures without eating it (it was supper time and I had soup for breakfast!)
The green in the picture is a green onion cut into slices. So simple, cheap, and gorgeous!
