Meatloaf (With secret veggies)

Sometimes you have to sneak in those vegetables...
Meatloaf
What You Need:
2 lbs Ground Beef (I like to use extra lean)
2 Eggs
1 cup Bread Crumbs
1/2 tsp Salt
1/2 Black Pepper
1/2 tsp Garlic Powder
1 cup diced Carrot
1/2 Onion, chopped
1/4 cup Water
1 tbsp BBQ Sauce
1 tsp Sugar
1 tbsp Freshly Minced Parsley Flakes (Dried also works)

Pre-heat the oven to 350 degrees.  In a large bowl, add the ground beef and set aside.  In a food processor, add the water, 2 eggs, chopped onion, and diced carrot.  Puree, adding the bbq sauce and spices and mixing until the veggies are smooth.  Add to the beef and mix well.  Add the bread crumbs and parsley and pack the meat into a log shape.  I like to paint the outside with ketchup (about 1 tbsp total) to give the loaf a sweet crust, but you can also wrap it in bacon if you prefer a more meaty feast.  Cover and bake 1 hour.  Remove the foil and bake and addition 30 - 45 minutes, depending on the thickness of the loaf you formed.  Let sit 10 minutes before serving!  This is excellent and a great way to sneak some veggies into stingy kids' (and husbands') diets!

More Vegetables:  You can add diced bell peppers for more vegetable flavor, or even some jalepenos for a spicy kick!
