Lemon Mint Shrimp Kebobs

A refreshing light fare that goes wonderfully with a Mojito!
Complexity Level:  Easy
Lemon Mint Shrimp Kebobs
What You Need
1.5 lbs Shrimp, Raw -- Cleaned
3 Mint Leaves, minced
1 Lemon
Pinch of Salt
Pinch Black Pepper
Pinch of Garlic Powder
1 tbsp Olive Oil

These are super simple and extremely healthy!  The start, heat the grill.  Mince the mint leaves, and add them to a small mixing bowl.  Zest half of the lemon, then halve the lemon, and slice half into 1/4 inch slices.  Add the zest to the mint, and whisk in the olive oil, juice of half the lemon, salt, pepper, and garlic.  Toss the shrimp into the mint mixture and let sit 5 minutes.


I like to make the skewers pretty by placing a wedge of lemon on the bottom and 1 mint leaf.  Then I skewer the shrimp and grill.  These will cook fast, no more than 8 minutes max or you will start to make them chewy!  The larger the shrimp the more time to cook, but this recipe works great with medium sized shrimp.  Tiger shrimp are too awkward to skewer and can be grilled butterflied and without a skewer.

This recipe is fast, healthy, and is a wonderful topped for salads!  And I will say it again, they go wonderfully with a nice cold mojito!
