Curried Spinach Dip

An exotic flavor..... It's a Good Thing!
Curried Spinach Dip
What You Need:
2 Packs of Frozen Spinach
1 tbsp Curry Powder
1 tsp Cumin Powder
1 8oz container of Sour Cream
6 oz. Mayonaise (use light if preferred! or vegannaise for great omegas!) 
1 tbsp Minced Cilantro
1 tsp Minced Mint Leaves
1 pinch Nutmeg (like 3 grates of a whole nutmeg seed)
1/4 tsp Cayenne Pepper
1/2 large Shallot, minced
1/2 tsp Salt
Black Pepper
Pita Bread, Veggie Sticks

In a large bowl, mix together the sour cream, mayo, mint, cumin, curry, cilantro, cayenne, nutmeg, and salt. Taste to see if black pepper and more salt are needed to your taste preference. Make sure the spinach has been drained, and fold it and the shallots into the curry mixture. 

Chill for at least 1 hour. Serve along side toasted pita bread (bake it don't fry it!) and veggie sticks. Excellent mid-day snack or sandwich spread!
