Crab Stuffed Mushrooms

Wonderful Start to Any Meal!
Crab Stuffed Mushrooms
What You Need:
4oz Cream Cheese (room Temp)
6 oz Imitation Crab (Seafood Dept at Grocery Store) or Real Lump Crab Meat
1/2 tsp Onion Powder
1 tsp Garlic Powder
Sea Salt

Black Pepper
Balsamic Vinegar

1/4 Onion Minced
1/4 cup Parmesan Cheese
1/4 cup Mozzarella Cheese
Fresh Parsley
Olive Oil
12 oz Whole Mushrooms, remove stems

Pre-heat the oven to 450 degrees Fahrenheit.  In a medium mixing bowl, mix the cheeses, crab, and spices (salt and pepper to taste).  Heat 1 tbsp Olive oil and minced onion in a medium oven safe skillet.  Spoon the crab cheese mixture into the caps of each mushroom.  Sprinkle with fresh parsley and more parmesan cheese.  When the onions begin to brown, place the mushrooms over the onions, keeping the stuffed side facing up.  Drizzle with the balsamic vinegar, turn off the stove top, and place the skillet into the oven.  Bake for 6 minutes, then crack the oven to Broil to brown (browning takes about 3 minutes).

Remove the skillet from the oven and let sit 2 minutes, then plate the caps.  This recipe is great if you have oven safe dishes too!  Just add the heated onions, place them into the dish, then add the mushroom caps.  THis is best to serve immediately without the hassle of transferring from the skillet!  The onions are tasty, I like them drizzled over the cooked caps as well!

Enjoy!

XOXO,

Aimee
