Chickpea and Kale Salad

So fresh, vitamin packed, and great for all to enjoy!
Makes 6 servings
Complexity Level:  Easy
Chickpea and Kale Salad
What You Need:
1 bunch Kale (I used Organic Red Kale)
1/2 Onion, minced
1 can Chickpeas
1/2 cup diced Fresh Mushrooms
Salt and Pepper to Taste
1/4 tsp Garlic Powder
1 tbsp Olive Oil or Butter (Oil is vegan recipe)

Rinse the Kale and remove the stems.  Heat the onions and mushrooms in a large skillet with the oil or butter.  After about 5 minutes, add the cleaned and de-stemed Kale and let the heat wilt slightly.  Add the can of chickpeas and the salt, pepper, and garlic.

Remove from heat and serve warm!  Excellent low fat, healthy, and hearty side dish for parties, grilling nights, or just about anything you may be enjoying!  Also complements a cold beer!
