Antipasti Bread

It's everything you ever wanted in a bread!
Complexity Level:  Easy
Antipasti Bread
What You Need:
3 1/2 cups Flour
12 oz Warm Water
2 packets of Dry Fast-Acting Yeast
1/2 cup Chopped Artichoke Hearts
1/2 cup Sliced Kalamata Olives
2 tbsp Sugar
10 cloves Roasted Garlic, chopped
1/4 cup Minced Fresh Spinach (about 1 big handful of leaves)
2 tsp salt
1/2 tsp Garlic Powder
2 tsp Olive oil
1/4 cup chopped Red Onion
1/4 cup Parmesan Cheese

This is Bread that will make everyone you know go "Where Did You Buy This!?"  The answer... "Oh it's just something I whipped up!"  That simple.  That Awesome!  To Start:

First using warm water (I like to use the hottest water my sink will give) add the 2 packets of yeast with 2 tbsp of sugar and 1 1/2 cups of the warm water in a tall glass, cover with a wet paper towel and set aside 10 minutes.

Meanwhile chop the olives, artichoke hearts, onion, spinach, and roasted garlic cloves and set aside.  In a large bowl, add the flour, olive oil, and salt, then mix in the yeast (after it has sat 10 minutes).  Fold in the chopped vegetables and parmesan cheese, and place into a large bowl for rising.  I like to grease the bowl with some olive oil, so as the bread rises it doesn't stick to the sides.

I use my oven as a proofer to let the dough rise.  Heat the oven to warm (less than 120 degrees) then place the bowl, covered in a wet towel, in the oven and close the oven door.  Do not open the door for at least 1 hour.  The yeast has been double for this recipe because it is a dense bread.

After rising for 1 hour (minimum though 1.5 hours is ideal) remove from bowl and add to a loaf pan.  No loaf pan?  No worries!  You can form into a log and place in a well greased (2 tbsp Olive Oil) 9X13 pan (or make it a square loaf and use an 8X8).  Let rise another 45 minutes by repeating the "proofer" setup -- oven will need a small bit of heat again -- and then bake for 40 minutes at 350 degrees Fahrenheit.

This Bread is awesome when you mix it up too!  Add Cheddar Cheese and Ham and make it into Rolls! Excellent for breakfast, lunch, or even Dinner!  You can add anything, including bacon, because there is no limit on what you can do in the kitchen.  So long as you keep the yeast/water/flour and temperature/ rising the same, the rest is up to you!
