Sweet Honey Oat Encrusted Salmon

Salmon thats so juicy and sweet your friends will envy you--
Complexity Level:  Intermediate

Honey Oat Encrusted Salmon
What You Need:
2 6oz Portions Fresh Salmon (skinned and de-boned)
1/2 cup Oats

3 tbsp Sugar
3 tbsp Butter
1 tbsp Olive oil + 1 tsp Butter
Sea Salt
Honey
Mint
1 Apple


Sprinkle the filets with sea salt. In a small skillet, heat the olive oil and 1 tsp butter. Meanwhile, melt the sugar, oats, and 3 tbsp butter in a medium bowl.


Mix and press onto tops of salmon. Place the filets oat side up into the skillet once the oil butter mixture has begun to foam, seaing the bottoms of the fillets for about 6 minutes. Drizzle with honey, and place skillet into oven and broil for 3 minutes, or until the oats brown.

If you want the salmon more well done (this recipe makes for medium to medium well, heat in oven at 350 degrees for 4 minutes before beginning to broil. Serve with a fresh drizzle of honey, some mint leaves, and freshly sliced apples. This is perfect to top a bed of mixed greens!
