Portobello Burgers

Portobello Burgers
You can just grill a whole portobello, or chop it up into a delicious patty. Here are both ideas to play with:
Grilled/Baked Portobello
1 tsp Balsamic Vinegar
1 tbsp Olive Oil
1 Pinch salt
1 Pinch Black Pepper
2 Portobellos (remove stem and scrap gills)
Pinch garlic Powder

Whisk the vinegar, olive oil, salt, pepper, and garlic and marinate portobello for at least 1 hour. If grilling, place over medium flame and let cook for 8 minutes, flip, and cook 5 more. While hot, I recommended adding some fresh spinach and feta to make this a burger people will envy! Not a feta fan? Make a Cilantro Lime dressing and drizzle over the mushroom--this is great sliced over a bed of lettuce!
Cilantro Lime Dressing:
Juice of 2 Limes
2 tbsp Parmesan Cheese
1 tbsp Pine nuts
1 Pinch Sugar
Salt
Pepper
1/2 cup Fresh Cilantro
Olive Oil

Using a food processor, add all ingredient except for olive oil. Pulsate to bind, then slowly add olive oil until the consistency is your preference. If you add too much oil, you will need more salt and lime juice, which just means you will have more than planned and this stuff is good! Serve with your favorite salads, use as a dipping sauce for wings and fries, or be creative and spread on a sandwich for a delicious twist everyone will love!

Portobello Veggie Burgers
1 Large Portobello Mushroom, cleaned and diced (you can use 6 oz white mushrooms!)
1 tbsp Minced Onion
1 Pinch Salt
1 Pinch Black Pepper
1 Egg (can use 2 whites to make healthier!)
1 Pinch Garlic Powder or 1 minced Clove
1/4 cup Bread Crumbs
2 tbsp chopped fresh spinach
1 tsp Olive Oil
Juice of 1/2 Lime (optional but acidity helps bind all flavors)
No lime? Use Splash Balsamic Vinegar
1/4 cup Mozzarella or feta Cheese
1 Pinch Crushed Red Pepper Flakes (optional)
*can add shredded carrots, bell peppers, etc. Add anything you like to boost nutrition!)

Mix together and form into patties. Easiest if skillet cooked, but can be grilled! These are fantastic served on a toasted bun with cheese, lettuce and tomato! I simply love them! Enjoy ;)
