Miso Soup

Miso Soup
Miso Paste: (Red or White) Let's quickly talk about Miso Paste. You can either pay a fortune or get a deal. If you live in a cultural city, there are places that are "Oriental Food Mart", Bombay Mart, Seoul Mart, etc that carry wonderful asian foods at reasonable prices. Many Market Districts and Organic shops charge double for the goods.. watch out for those inflated "deals". Miso Paste is a mysterious good that can be put next to tahini on the list... What is it? Well Miso Paste is actually fermented soybean paste. Ew right? No way its sooo good! So here we go:

4 cups Water
White Miso Paste to taste (i'd probably use about 1 tbsp per cup)
Seaweed -- Look not everyone has dried seaweed in the pantry, you can use spinach instead. I thinks its just as yummy
1 Block Extra Firm Tofu -- will keep its shape -- diced
Green Onions

This is so simple! You boil the miso paste, water, and seaweed/ spinach. Before plating, I add the onions and tofu so they do not go limp. Serve hot and enjoy! You can play with this recipe. Make a miso pork soup, a spicy miso beef noodle bowl, miso rice, etc. The best part about cooking is making up your own favorites! People can be so timid in the kitchen -- let that wild side out!
