Irish Raisin Bread

I made muffins... and they were awesome! Not too sweet... A Great Treat!

Irish Raisin Bread
What You Need:
4 cups Flour (or All Purpose Gluten Free)
1 cup Sugar
3 Eggs
16oz Sour Cream
1 cup Raisins (i like half golden half regular)
1 tsp Baking Soda
1/2 tsp Salt
2 tsp Baking Powder

Preheat the oven to 325 degrees Fahrenheit. Grease (2) loaf pans (i like to use spray) and set aside. Mix the dry ingredients (flour, salt, baking soda, baking powder, sugar) in a large bowl. In a small mixing bowl, whisk the eggs and sour cream until well combined. 


Fold in the raisins to this sour cream mixture, then fold all of the mixture into dry ingredient mixture. Pour half of mixture into each loaf pan and bake for 1 hour. 


 Serve warm with butter, or use for french toast after cooling! Yeast free, simple, and fabulous!
