Simple Spinach Dip

Dip into a bite of sheer amazingness....

Every time I make this dip, people eat all of it, then expect a second helping to appear out of my bag. It truly is a dip that has been requested numerous times, copied and altered, devoured, stolen from party trays, and down right enjoyed.

 I needed a reason to make it, and was asked to do so at work so I figured, well the blog would love a picture and I am certainly never going to turn down this dip! So here it is: The simplest dip that leaves many talking:

Simple Spinach Dip
What You Need:
24 oz Sour Cream (you can use light or fat free for those dieters out there!)
1 packet Onion Soup Mix (I use "beefy onion" and no there is no beef in it!)
1 package of "Knorrs" Vegetable Soup Mix
1 1/2 cups Mayonnaise (12oz)
1/2 bunch Green Onions, chopped
1-3 cans sliced Water Chestnuts (chopped) -- some like more crunch others don't
1 bag (12oz) or 2 blocks (6-8oz) Frozen Spinach (thawed and drained -- press out water)**
1 Uncut Round Loaf of Bread to make a bread bowl if desired... though bread and this dip are a pair! -- Best with Rye and Pumpernickel, but all breads are yummy! OR cut sub rolls into 4 inch thick slices and hollow out little bowls - single serve = perfect for parties!
*never ever ever use canned spinach

In a large mixing bowl, whisk both soup mixes with the sour cream and mayo. Set aside. Chop the water chestnuts and green onions and mix into bowl.

Finally fold in the thawed and drained spinach -- if you do not use a colander to press the juice out of the spinach, you will have a soupy not so much a dip consistency... so please drain!

You can alter the amount of water chestnuts you use. For this recipe, I used 3 small cans. Some like a big crunch, others a light one. Either way add as much as you like!

This recipe does need to sit overnight, or minimum 1 hour prior to serving. Keep in fridge and serve chilled. We let it sit to re-hydrate all those yummy veggies that Knorrs mix provided!

You can even fold in Artichoke hearts -- Highly Recommended!
