Coconut Raisin Bread

Yeah. This was a good idea. And it was cheap!
Coconut Raisin Bread
4 cups Flour (or All Purpose Gluten Free)
11/4 cups Sugar
3 Eggs
16oz Sour Cream
1 cup Raisins (i like half golden half regular, but pictured with regular)
1 tsp Baking Soda
1/2 tsp Salt
2 tsp Baking Powder
5-8oz Shaved Sweetened Coconut (I used 8)

Preheat the oven to 325 degrees Fahrenheit. Grease (2) loaf pans (i like to use spray) and set aside. Mix the dry ingredients (flour, salt, baking soda, baking powder, sugar) in a large bowl. In a small mixing bowl, whisk the eggs and sour cream until well combined. Fold in the raisins to this sour cream mixture, then fold all of the mixture into dry ingredient mixture. Pour half of mixture into each loaf pan and bake for 1 hour. Serve warm with butter, or use for french toast after cooling! Yeast free, simple, and fabulous!

I made them into muffins, because though I do not own a loaf pan, I prefer the muffin portion!

  1. Oh my goodness, coconut and raisins are two of my favorite foods and you've found a recipe that combines them, yay! :) Cute blog, and I love that you cook on a budget. I am a college student that likes to bake/cook and it's hard to do that with limited cash but I'm learning it's doable!
