Citrus Rubbed Salmon and Garlic Steamed Rice


Amazing food made from scratch...
Complexity Level:  Easy

Citrus Rubben Salmon
What You Need:
2 6oz. Fresh Salmon Portions (deboned and skinned)
1 tsp Ground Orange Rind
1/4 tsp Celery Seeds
1/2 tsp Fresh Ground Black Pepper
1/4 tsp Ground Coriander
2 tbsp Died Red Onion
1 Lime (juice and then decor)
Sea Salt
1 clove Crushed Garlic 
1 tbsp Butter
1 tbsp Olive Oil

What To Do:






Sprinkle the salmon with the seasonings and set aside. In a medium skillet, heat the olive oil, butter, and garlic. Add the filets and red onions, squeeze the juice of half the lime over the salmon, and heat for about 8 minutes to brown, then flip and cook 8 more minutes.

You can grill this, and it is great when grilled, but i prefer a medium temp skillet browned fish, and it was snowing outside. If you prefer the salmon less well done, heat the butter more then sear each side of the fillet. This salmon was well done and was super juicy.

Serve hot and alongside some steamed broccoli and atop some white rice -- or your favorite sides. I topped with a garlic caper butter (just remove the salmon from skillet, toss capers into the butter sauce still in skillet, and use to top salmon and rice).
