Cinna-Doodle Biscotti

For Morning Crunch Time!

Cinna-Doodle Biscotti
What You Need:
2 Cups Sifted Flour
1 Egg
1 Egg Yolk
White of above egg + 1 tbsp water
1 1/2 tsp Ground Cinnamon
1 pinch Salt
1 cup Sugar
1/4 cup Dark Brown Sugar
1 tsp Baking Powder
6 tbsp Butter
1 tbsp Vanilla Extract (or almond/ coconut/ orange)

Pre heat the Oven to 315 degrees Fahrenheit. In a large bowl, sift together the flour, baking powder, cinnamon, and salt -- set aside. In a smaller bowl, cream together the butter and sugars, then add the eggs and extract. Fold the wet mixture into the dry, creating a crumbly dough (it will be sticky, its ok!).


Next, roll the dough onto a floured surface, forming two equal balls, shaping each into a log shape and placing on a greased baking pan (parchment paper will work as will a silpat if you have one). Brush with the egg wash mixture (egg white and water) and bake for 40 minutes.

Remove from the oven ans let sit on a cool pan for 15 minutes, leaving the oven on. Slice the dough into 1/4-1/2 inch slices (at an angle to produce longer, biased pieces), then place back onto the baking sheet. Bake an additional 15 minutes, the remove from oven, transfer back onto cool pans, and let cool.

Dip these in chocolate, or skip on cinnamon and add cranberries and pistachios -- this version is excellent dipped into melted white chocolate! A personal favorite!
